Recipe: Keto Cheese Egg Muffin
Ingredients (USA Units)
-
2 large eggs
-
¼ cup shredded cheddar cheese
-
1 tbsp heavy cream
-
1 tbsp diced green onions (optional)
-
1 tbsp cooked bacon bits (optional)
-
Salt & pepper to taste
-
Non-stick cooking spray or butter for greasing
Step-by-Step Instructions
-
Prep the Mug –
Take a microwave-safe mug (at least 12 oz capacity so the muffin doesn’t overflow).
-
Lightly spray the inside with non-stick cooking spray or rub ½ tsp butter around the inside using a paper towel.
-
This prevents sticking and makes cleanup easier.
-
Mix the Base – Crack eggs into the mug. Add heavy cream, salt, and pepper. Whisk with a fork until smooth.
-
Add the Flavor – Stir in shredded cheddar, green onions, and bacon bits (if using).
-
Microwave – Cook on high for 60–90 seconds. Check halfway to stir for even cooking.
-
Cool & Serve – Let it sit for 30 seconds before eating. Enjoy directly from the mug or pop it out onto a plate.
